Stormweaver vs Disciple of Varashta for endgame temple running

Assuming same spark/CoC build adjusted to fit each ascendency, which is best?

Double spark is great, but half stats extra focus should be a better overall damage boost. Then you get a big stat boost through the huge time lost jewel and also extra defenses through the faster energy shield (does the armor bonus thing make any difference whatsoever though?). For stormweaver a great selling point is getting way more remnants.

So I feel it boils down to getting way more remnants (and arcane surge yay but not really yay) vs the stat boost from jewel and extra energy shield boost?

Stormweaver mana stacking with adonias ego Is probably the strongest and most convenient to run and has the highest potential. Disciple looses a lot of its advantages in the hyper late game. Your default defense is mana stacking because that's because you run rathpit as focus. With adonias ego being the strongest mage weapon you now lose a lot of the advantages you mentioned. Leaving the main point of discussion the moon commands Vs the infusion support where imo the infusion support is way better because it lets you have cold spark pretty often which deals a lot more dmg and triggers coc a lot more and it lets you set up adonias ego skill in one rotation which is pretty convenient.

Stormweaver has a couple truly S-tier builds.

I'm also running Adonia's ego with COEA/Arc and COC/Comet. It's like walk in the park for any endgame contents. All the bosses are wipeout within seconds. The higher density of the monster pack, the more op of this build.

None, for spark go bm or oracle. Spark has low base crit of 9%, that hurts sorc class, can't get to 100% crit rate without pinpoint critical support gem that takes gem slot and reduces crit dmg by 30%.
Out of the 2 hard to say, Varashta little more defensive. Storm probably little better offence.
