God sacrificed himself to himself to satisfy the punishment for something he created ( sin / original sin ) because he was so angry he couldn't simply say "you know what it was a dumb idea".

Adam and Eve didn't know what good or evil was so. So they had no idea disobeying God would be 'evil'.

Also leaving the apple in the garden is like an adult leaving a handgun on the coffee table and then getting angry when their toddler plays with it and shoots themselves.
