Any manual camera will work. What you need is to control the white balance. Color correcting after you import is normal. Use a 50mm lens, which is most similar to the human eye. Unless you are shooting in a tight space or are shooting top down. The 50mm has to be farther from the subject than a 35mm, and it's annoying to have to stand on a ladder to use the camera for top down table-top shots, which I do a lot of.
A quick Google says Nikons are best for color accuracy, but if you don't know how to use Manual settings on your camera, you are relying on auto settings distorting the color for you. In a sense, the color always needs to be "distorted" which is setting the white balance and tint to account for the quality of light you are in.
