She is not crazy: she is reframing her experiences in a language that she can understand, which is religion. I'm not an expert on the subject, but it seems like the point she is making is that reality is shaped by subjective experience. She doesn't believe her stalker is being deliberately deceptive: she believes he genuinely believes his delusions about her. When she says the devil has his mind, this is metaphorical for Godlessness and sin. Therefore, she is making a point that we should believe in the word of God (goodness and truth) over subjective experience (like her stalker's delusion).
