hopefully this communicates to people finally that we're not living in 2300 and websites/games/software are in a state of needing a lot of polishing to be "realistic" or completely smooth flowing

I've seen such petty criticisms on twitter, Reddit etc. someone in this comment section is talking about how these mistakes apparently make the game "soulless" lol.
It is still a GAME. Sometimes, you take shortcuts to preserve the fun. These games always aim towards reality and to create an illusion of it, but they're not trying to be 1:1 real.
Red Dead Redemption 2 was a bit more lengthy in its animations, but still wasn't 1:1 with reality. Skinning an animal & looting a corpse took more time than it did in, say, Ghost of Tsushima but still it was a LOT faster than real life because it's about an illusion of real life. You individually picked objects up when looting. But that game was intentionally going for a slower pace and engaging with these slower mechanics helped to cement those things as an intentional choice by the player. It all served the sense of being an outlaw in that slower, more desolate time.
GTA games aren't really about that. So they take more arcade-y shortcuts. Does anyone really want Lucia to take out her purse, and then take out a phone? Do they want Jason to spend even more time shifting the various items in the fridge around to pick the correct thing? That would be more real, but not necessarily more fun. And it certainly wouldn't fit the vibe of a GTA game. This is the franchise, after all, where you pull a rocket launcher out of your ass to shoot down a police helicopter.
There is so much cool stuff going on in this showcase. So much detail in the way all these NPCs look and act, the way environments look in this OPEN WORLD GAME (it is a LOT harder to achieve fidelity at that GRAND scale), the myraid of looks for Jason & Lucia, creating a bigger map than any other game in the studio's history, making sure that the world is meaningfully big (I.e. you can go inside more places, exploration is more rewarding). That is where the money and time went.
There's obviously loads of valid criticism to levy at Rockstar Studios' practices and games. I'm no corporate shill or blinded fanboy. It's just that this ticky-tac bullshit just comes off as ignorant.
