It’s best to delete the app because it’s not in the App Store so Apple obviously isn’t going to update it which means it’s eventually going to be vulnerable

No, if you delete the app you won't be able to reinstall it again (you can technically but it's a mess and you have to change your App Store region.) The only issue is that the app might stop working eventually without updates, you generally won't be vulnerable to any security threats.
